Pét-nat (petillant naturel) is a style of sparkling wine made in a manner that predates the better-known Methode Champenoise or the Charmat method used in Champagne, Prosecco, or Cava production. Rather than inducing a second fermentation in bottle to create carbonation, makers of pét-nat capture the end of primary fermentation and bottle before fermentation is finished. The result is softly fizzy, low intervention, low or no sulfite whimsical sparkling wine typically sealed with a crown cap instead of a cork.
